Food Sci NutrPhysicochemical properties, lipid oxidation, and sensory acceptability of low‐fat mutton patties substituted with Bambara groundnut flour were determined. The increase in the percentage substitution of BGN flours significantly increased the fiber, ash, and carbohydrate contents of the formulated mutton patties.
