Currently, there is a growing interest in dietary fiber (DF) due to its health‐promoting properties, especially in relation to the impact on the gastrointestinal tract. For this reason, both raw materials and products with the highest DF content are sought. Fruit and vegetable pomace seem to be both a waste raw material with such characteristics.
