مجله پژوهشهای علوم و صنایع غذایی ایران, 2011 نسبت اسیدهای چرب غیراشباع به اشباع و مقدار ترکیبات توکوفرولی و پلی فنلی روغن مغز بنه در لحظه صفر به ترتیب 8/6 و 28/725 و 1/40 میلی گرم در کیلوگرم روغن بود. همچنین خصوصیات کیفی روغن مغز بنه (عدد پراکسید، عدد دی ان مزدوج و عدد کربونیل) در لحظه صفر نشان داد
