سابقه و هدف: بیماری دیابت یکی از شایعترین بیماری‌های سیستم غدد درون ریز بدن می‌باشد. در این بیماری به دلیل افزایش سطح گلوکز خون میزان گلایکه‌شدن پروتئین‌ها نیز افزایش می‌یابد. گلایکه‌شدن پروتئین‌ها در دیابت منجر به عوارض جبران ناپذیری می‌شود.
