The phenolic profile and antioxidant activities of Mentha piperita hydroethanol extract, as well as its influence on the acidity, pH, antioxidant activity, and lipid profile of a steamed yogurt stored for 20 days at 4°C, were studied. The extract studied is rich in phenolic acids, particularly rosmarinic acid, and has a high antioxidant potential.
