Chitosan coatings significantly impact the rehydration properties of dried carrot slices, with freeze‐drying and CH‐2C coating at 55°C yielding the highest rehydration ratio (RR). The study further explores how dryer type, coating thickness, and variations in rehydration temperature affect rehydration properties.
