Environmentally Sustainable Preparation of Oleuropein and Its Dialdehydic Derivatives in a Simple Pharmaceutical Formulation

A “phenolic complex“ with oxygen scavenging power similar to a mixture of phenols extracted from an EVOO was obtained by the one‐step Krapcho's decarboxylation of oleuropein in ChCl:citric acid 1 : 1 DES. The mixture is a potential ready‐to‐use active formulation able to emulate the antioxidant power of EVOO.
