Journal of Food Quality, Volume 2026, Issue 1, 2026.In this study, pollen content, physicochemical parameters, quantification of phenolics and flavonoids, antioxidant capacity, UV spectrum scan, and substance identification by LC‐HRMS were evaluated in Assa‐peixe honey. The pollen content analysis confirmed 100% Vernonia sp. pollen, characterizing it as monofloral.
