Assessment of Metabolites in Noni Fruit Slurry Fermented With Four Non‐Saccharomyces Yeasts

Dried noni fruit slurry (DNFS) was fermented for 14 days with selected non‐Saccharomyces yeasts. 1‐Methylcyclopropene (1‐MCP) containing‐paper delayed the color change and maintained higher rate of commercially acceptable fruit in Anxi persimmons during storage were attributed to the increased activities of H+‐ATPase, Ca2+‐ATPase, and Mg2+‐ATPase and higher levels of ATP content and energy charge (EC).
