Food Science &Nutrition, Volume 13, Issue 7, July 2025.This study evaluated melatonin and arginine effects on bioactive compounds in Valencia orange peel during 6 months of cold storage. Mel (1 mM) enhanced fructose, ascorbic, citric, and chlorogenic acids, whereas Arg (10 mM) increased sucrose, ascorbic acid, and phenolic compounds. Both treatments preserved and enhanced bioactive compounds in orange peel.
