Structure–Function–Stability Relationships of Polyphenol‐Based Food Preservation Systems Across Major Polyphenol Classes

open access: yesFood Frontiers, Volume 7, Issue 5, September 2026.
Polyphenol stabilization and integration enable active food packaging with antioxidant, antimicrobial, freshness indicating, and controlled‐release functions under real storage conditions. ABSTRACT Polyphenols are increasingly explored as functional components in active and intelligent food preservation systems because of their antioxidant ...

Hydrogen Sulfide Application Reduces Postharvest Weight Loss in Tomato Fruit by Promoting Cuticular Wax Accumulation

open access: yesFuture Postharvest and Food, Volume 3, Issue 3, Page 361-370, September 2026.
NaHS‐derived H2S enhances postharvest tomato fruit storability by reducing weight loss, delaying peel wrinkling, and maintaining peel firmness. This response is associated with increased cuticular wax deposition and upregulation of wax biosynthetic and regulatory genes, without marked changes in PME or PG activities. ABSTRACT During postharvest storage,

Nonthermal Concentration of Red Beetroot Juice by Reverse Osmosis and Forward Osmosis

open access: yesFood Science &Nutrition, Volume 14, Issue 9, September 2026.
RO and FO were used for nonthermal concentration of red beetroot juice. Single strength juice was concentrated by RO to 17 °Brix, and by FO to 50 °Brix; color and betalain were preserved by both processes. Overall, FO is a promising method for concentrating beetroot juice.

Effect of encapsulated purple sweet potato (Ipomoea batatas L.) peel extract on fresh goat cheese: quality and polyphenolic and color stability during refrigerated storage

open access: yesJournal of the Science of Food and Agriculture, Volume 106, Issue 12, Page 6905-6920, September 2026.
Abstract BACKGROUND The aim of this work was to characterize the polyphenolic profile of encapsulated purple sweet potato peel extract (PSPPE), to assess the effects of its addition (1.5 and 3 g L−1) on the color, texture, microbiological quality, microstructure, and sensory attributes of fresh goat cheese, and to monitor the polyphenolic profile and ...
