Effect of a total substitution of vegetable protein and phosphates on shrinkage by cooking and purging in chopped york ham

open access: yesRevista Facultad Nacional de Agronomía Medellín, 2020
The trend with the most significant impact on food is currently clean labeling, and meat products are not exempt from it. This trend promotes the elimination of additives of inorganic origin and their replacement by natural ingredients in the formulation

A Mechanistic Pore-Scale Analysis of the Low-Salinity Effect in Heterogeneously Wetted Porous Media [PDF]

open access: yesarXiv, 2019
The enhanced oil recovery technique of low-salinity (LS) water flooding is a topic of substantial interest in the petroleum industry. Studies have shown that LS brine injection can increase oil production relative to conventional high-salinity (HS) brine injection, but contradictory results have also been reported and an understanding of the underlying

Chloride‐Mediated Electron Buffering on Ni‐Fe Anodes for Ampere‐Level Alkaline Seawater Electrolysis

open access: yesAdvanced Functional Materials, EarlyView.
Utilizing abundant chloride ion (Cl−) of seawater, the small organic molecule (SOM) layer on the electrocatalyst surface is converted to SOM‐Cl layer. Meanwhile, the conjugated structure of SOM is modified. SOM‐Cl layer can effectively mitigate the damage caused by the highly oxidative environment.

Migration of Brine Inclusions in Salt [PDF]

open access: yesNuclear Technology, 1982
Theories of the migration of brine inclusions in salt are interpreted as simple physical processes, and theories by Russian and U.S. workers are shown to yield the same results. The migration theory is used to predict threshold temperature gradients below which migration of brine inclusions should not occur.

Supramolecular Zwitterionic Hydrogels for Information Encryption, Soft Electronics and Energy Storage at Icy Temperature

open access: yesAdvanced Functional Materials, EarlyView.
A series of ACHPES‐based hydrogels are developed and realizing multiple functions like anti‐fouling properties, alkali‐induced color/fluorescence‐changing ability and strain sensing. Furthermore, the hydrogels show excellent anti‐freezing performance, whose optical, mechanical and electrical properties remain stable at −47.3 °C.

Biodegradable and Recyclable Luminescent Mixed‐Matrix‐Membranes, Hydrogels, and Cryogels based on Nanoscale Metal‐Organic Frameworks and Biopolymers

open access: yesAdvanced Functional Materials, EarlyView.
The study presents biodegradable and recyclable mixed‐matrix membranes (MMMs), hydrogels, and cryogels using luminescent nanoscale metal‐organic frameworks (nMOFs) and biopolymers. These bio‐nMOF‐MMMs combine europium‐based nMOFs as probes for the status of the materials with the biopolymers agar and gelatine and present alternatives to conventional ...

Observation and Modeling of Hydrothermal Response to the 2015 Eruption at Axial Seamount, Northeast Pacific

open access: yesGeochemistry, Geophysics, Geosystems, 2018
The 2015 eruption at Axial Seamount, an active volcano at a depth of 1500 m in the Northeast Pacific, marked the first time a seafloor eruption was detected and monitored by an in situ cabled observatory—the Cabled Array, which is part of the Ocean ...
