Bromelain: from production to commercialisation
Journal of the Science of Food and Agriculture, 2016AbstractBromelain is a mixture of proteolytic enzymes found in pineapple (Ananas comosus) plants. It can be found in several parts of the pineapple plant, including the stem, fruit, leaves and peel. High demand for bromelain has resulted in gradual increases in bromelain production.

Purification of anti-bromelain antibodies by affinity precipitation using pNIPAm-linked bromelain
Preparative Biochemistry & Biotechnology, 2016Affinity precipitation has emerged as a very useful technique for the purification of proteins. Here it has been employed for the purification of anti-bromelain antibodies from rabbit serum. A system has been developed for reversibly binding and thermoprecipitating antibodies.

Publisher Summary Bromelain enzymes are found in tissues of the plant family Bromeliaceae of which pineapple, Ananas comosus (L), is the best known. The proteolytic enzyme found in the juice of pineapple stem is called stem bromelain and the enzyme in the fruit was first described under the name of bromelin 1 and is now called fruit bromelain ...
