The detection of polyphosphate in broiler chicken breast muscle

Journal of the Science of Food and Agriculture, 1977
AbstractThe relationship between the concentration of sodium and phosphorus (as P2O5) in commercially processed broiler chicken breast muscle as a result of injection of various levels of sodium polyphosphate and sodium chloride has been studied and a routine analytical method which can confirm the presence or absence of the addition of these chemicals

Rheological characteristics of mechanically separated chicken and chicken breast trim myofibril solutions during thermal gelation

Food Chemistry, 2020
Mechanically separated chicken (MSC) was obtained by two different separation methods (MSC1, Beehive separator, 3-5 d-old bones; MSC2, Poss separator, fresh bones) and compared to chicken breast trim (CBT). Rheological attributes of myofibrillar protein solutions during thermal gelation and cooling were evaluated.

Coordinate accumulation of troponin subunits in chicken breast muscle

Developmental Biology, 1989
The accumulation of troponin subunits in developing chicken breast muscle was determined by two-dimensional gel electrophoresis and an image analyzing system. Many troponin T isoforms, including those hidden behind creatine kinase, were detected on the two-dimensional pattern by the addition of 6 M urea in the second dimension.

Rhinoplasty Training: An Innovative Learning Approach Using Chicken Breast

Facial Plastic Surgery
AbstractMastering rhinoplasty surgical techniques requires extensive learning involving theoretical studies, internships, cadaver laboratories, simulators, nonhuman models, and hands-on practice. A novel method using chicken breast simplifies skill development, offering flexibility and accessibility. Training on chicken breast allows surgeons to refine

Implications of wooden breast defect on technological properties of chicken breast fillets

2014
In the last few years, different muscle myopathies have mostly appeared in the breast muscle of broiler chickens. Wooden breast defect is a recent emerging myopathy which has been macroscopically described by areas of substantial hardness and slightly outbulging in breast fillets. The aim of this study was to evaluate the impact of wooden breast defect
