The structure of chitin

The structure factors for the various reflections of α-chitin have been calculated for both the structures of Carlstrom and of Dweltz. Comparison with observation does not indicate the definite superiority of one over the other, although Carlstrom's structure seems to be better from stereochemical considerations.

Chitin and chitosan nanofibers: electrospinning of chitin and deacetylation of chitin nanofibers

Abstract An electrospinning method was used to fabricate chitin nanofibous matrix for wound dressings. Chitin was depolymerized by gamma irradiation to improve its solubility. The electrospinning of chitin was performed with 1,1,1,3,3,3-hexafluoro-2-propanol (HFIP) as a spinning solvent.

Enzymatic degradation of chitins and partially deacetylated chitins

The enzymatic (lysozyme, chitinase etc.) digestibility of chitins obtained from squid pen and shrimp shell, and of partially deacetylated chitins (DA-chitins) was investigated. The digestibility of various chitins by the chitinase from Bacillus sp. PI-7S was much higher than that by lysozyme, and beta-chitin was digested more smoothly than alpha-chitin.

Shrimp chitin as substrate for fungal chitin deacetylase

The fungal chitin deacetylases (CDA) studied so far are able to perform heterogeneous enzymatic deacetylation on their solid substrate, but only to a limited extent. Kinetic data show that about 5-10% of the N-acetyl glucosamine residues are deacetylated rapidly. Thereafter enzymatic deacetylation is slow.

AbstractThe 13C NMR spectra of N‐acetyl‐D‐glucosamine (1) and chitobiose (2), monomer and dimer of chitin, were assigned and used to assign the 13C NMR spectra of chitin in lithium thiocyanate and in LiCl/dimethylacetamide solutions. The dissolution of chitin in formic acid was studied.
