Publisher Summary This chapter discusses synthesis and degradation of chitin biopolymer. Chitin is present to a small or large extent in most invertebrates, notably in cuticles of arthropods, in primary septum and scar buds of yeast, and in cell walls of most filamentous fungi.

Publisher Summary Chitin is found in the exoskeleton of arthropods (crabs, shrimps, insects, etc.) but also in the cell walls of most mushrooms, in some bacteria, and in some algae. From a structural point of view, chitin performs the same function in invertebrates as cellulose does in plants.

Chitin Structure and Activity of Chitin-Specific Enzymes
2020An early result observed with exochitinase activity showed that exoenzymes require access to free ends of chitin assemblies, irrespective of whether the enzymes are derived from procaryotic or eucaryotic sources. Using Linear Chitin in enzyme studies, separate assays for exo- and endochitinase activity were formulated.
