Summary The relationship between fructans and cold stress response in higher plants is discussed, consideringtheir distribution in an homologous series and its implications on the osmotic potential of the cell. Fructose content by weight of each member of a fructan series was found to be inversely correlated to the absolute temperature of soil or air.
