Ultrafiltration of Milk: Effect on Lactoferrin, Lysozyme, and Lactoperoxidase Activity During Cheddar Cheese Ripening

The retention of lactoferrin lactoperoxidase, and lysozyme in milk concentrated by ultrafiltration (UF) before cheesemaking and on cheese properties was studied. Cheese made with concentrated milk retained 17% more LF than the control. No effect on cheese properties was observed. UF could be an additional tool to enhance cheese bioactivity.

Photocured Siloxane‐Containing Emulsion‐Templated Porous Polymer Materials With Exceptional Mechanical Resilience

We show that by tailoring the mixed solvent content, our photocured emulsion‐templated porous siloxane‐based copolymers can undergo high hysteresis over 5000 compressive cycles with minimal damage. These thiol‐ene siloxane polymers show exceptional mechanical performance, which was maintained, demonstrating these outstanding properties.
