The mature longan fruit (Diniocarpus longan Lour.) is small (ca. 1.5-2 cm diameter), conical, heart-shaped or spherical in shape and light brown in colour. It has a thin, leathery and indehiscent pericarp surrounding a succulent, edible white aril. The aril contains a relatively large dark brown seed.

Neural network modeling of sorption isotherms of longan (Dimocarpus longan Lour.)

A multilayer neural network model was developed to predict the equilibrium moisture content of longan (Dimocarpus longan Lour.) and the model was trained using a back-propagation algorithm. The predictive power of the model was found to be high (R^2=0.9998) after it was adequately trained.

And the effects of controlled atmosphere (CA) and low temperature on fruit quality loss were studied, especially on color change (browning) and water loss. Fermentation process optimization and chemical constituent analysis on longan (Dimocarpus longan Lour.) wine

Based on single factor and orthogonal experiments, optimal fermentation conditions for longan wine were Saccharomyces cerevisiae strain of Lalvin KD, juice content of 70% and alcohol content of 10°. Sixteen amino acids were detected. Proline, alanine, glutamic acid and aspartic acid contents were relatively high.
