Diffusion coefficients for predicting rice drying behaviour

Abstract Recent efforts to characterize moisture diffusion in rice are summarized. New equations for temperature dependent liquid diffusion coefficients for rough and brown rice are presented. Result sindicate that the resistance to moisture movement is greater in rough rice than in brown rice.
