Effect of Microfluidization on Functional Properties and Digestibility of Flaxseed Protein Isolates

Dynamic high‐pressure microfluidization effectively reduces protein particle size while increasing solubility and surface hydrophobicity. These structural modifications significantly enhance the techno‐functional properties–especially the stability of emulsions and gel properties–without compromising its in vitro digestibility.
