Conformational and Physicochemical Properties of Lagenaria siceraria Seed Protein Isolate‐Cocoyam Mucilage Conjugates: Impact of Glycation Time

Maillard conjugates showed a higher denaturation temperature compared to the protein isolate. It had a higher solubility profile compared to the protein isolate. It increased the emulsifying and foaming properties of Lagenaria siceraria protein isolate.
