Effect of pH on recovery efficiency and anthocyanin composition of Clitoria ternatea extracts with application as lipid antioxidants in food preservation

pH significantly affects the extraction efficiency of TPC TAC and the extracted anthocyanin components. pH 3 and pH 7 yield the highest extraction efficiency and antioxidant activity. Puerariae Radix and Hovenia Seed were co‐fermented with Lactiplantibacillus plantarum and Lacticaseibacillus paracasei to produce PHF. In a mouse model of alcohol‐induced liver injury, PHF intervention alleviated liver damage. The underlying mechanism may be related to the regulation of macrophage polarization.
