Structure and Mechanical Behavior of Fully Substituted Acid Starch Esters

Fully substituted acid starch esters (FASEs) with 2 to 12 Carbons side chains are completely amorphous, while a part of C16 side chains is able to crystallize, depending of the storage time at room temperature. Ductile or brittle behavior is observed for FASE with C16 side chains, depending on the presence or absence of crystals.
