中国•内蒙古草原地域の伝統的アルコール発酵乳であるアイラグ(Airag)の乳酸菌数および酵母数を計数し,乳酸菌と酵母を分離して表現形質をもとに同定した.アイラグの発酵を現地で3日間行なった試料から乳酸菌を105~107/ml,酵母を104~106/ml検出した.発酵試料から分離された乳酸菌はLactobacillus属のみで,Lb. brevisおよびLb. curvatusと推定した菌株がそれぞれ総菌株数の75%および25%を占めた.酵母では,Saccharomyces globosusおよびBrettanomyces anomalusと推定した菌株が分離菌株のそれぞれ56%および44%を占めた、アイラグの微生物叢は,同一地域で作られる自然発酵乳のエードスンスーと異なった ...
