Validation of Sanitizer Concentration to Reduce Cross‐Contamination Risk During Washing of Apples
Journal of Food Process Engineering, Volume 49, Issue 2, February 2026.Eighty parts per million PAA was more effective at removing E. coli TVS353 on inoculated apples at both COD levels, achieving reduction levels of 5.3–6.0 log MPN/apple compared to 80 ppm NaOCl (2.9–3.7 log MPN/apple). Both sanitizers were effective at preventing E. coli cross‐contamination compared to no sanitizer treatment.
