Gluten je široko prisutan u prehrani suvremenog čovjeka. Usporedno s tim u porastu je preosjetljivost na gluten te celijakija kao najteži oblik. Celijakija je genetički predisponirana kronična upal­na bolest crijeva uzrokovana glutenom. Provođenjem seroloških testova prevalen­cija celijakije je u porastu.
