The color of human hair is determined by melanin. Melanin is produced and packaged into membrane-enclosed melanosomes by melanocytes. The melanosomes are then embedded in a matrix of keratin-associated proteins in keratinocytes while these keratinize during hair growth.

Perception of Attractiveness by Obesity and Hair Color
Perceptual and Motor Skills, 1989In a study of 318 Caucasian college students, obese persons and redheaded men were seen as unattractive compared to the nonobese and other hair colors. The obesity stereotype and the hair-color stereotype appear to be evaluated separately with little interaction.
