Preliminary Characterization of Monofloral Helianthus annuus L. Bee Pollen Using Advanced Analytical Techniques: A Comparative Study With Polyfloral Pollen

open access: yesFood Science &Nutrition, Volume 13, Issue 10, October 2025.
This study characterized monofloral sunflower bee pollen using palynological, physicochemical, and metabolomic analyses. LC–MS/MS results revealed significantly higher hyperoside levels in the monofloral pollen. The data obtained support the potential of sunflower pollen in functional food formulations.

Exploring New Species of Lactic Acid Bacteria in Fermented Foods: A Case Study of Zha‐Chili

open access: yesFood Science &Nutrition, Volume 13, Issue 10, October 2025.
Recent novel LAB are primarily isolated from animal guts and fermented foods. Zha‐chili: a traditional Chinese fermented food as a novel LAB resource. The integration of metataxonomics, culturomics, genomics, high‐throughput methods, and artificial intelligence facilitates the discovery, detection, and characterization of novel LAB species.

In Vitro Antibacterial Activity of Raw Honey From Apis mellifera, Awi Zone, Amhara, Ethiopia

open access: yesMicrobiologyOpen, Volume 14, Issue 5, October 2025.
Honey samples were collected from districts of Awi zone. The moisture contents and pH of honey samples were 13 ± 0.07–20 ± 0.09 and 3.76–4.01, respectively. Pure 100% honey samples showed the greatest inhibition zone with 25% showed the lowest inhibition zone against tested bacterial pathogens.
