Journal of Agricultural and Resource Economics, 2000 This study provides a unique view of the demand for carbohydrate sources in Russia at the household level. The data used in this analysis were obtained from a 1996 survey in eight Russian metropolitan areas. An almost ideal demand system (AIDS) model is used to examine the expenditures for potatoes, bread, flour, rice, and pasta.
