AbstractTelomeres are the tips of chromosomes and consist of proteins and hexanucleotide tandem repeats of DNA. The DNA repeats are shortened at each mitotic division of normal cells, and the telomere length chronicles how many divisions the cell has undergone. Thus, telomere length is a marker of fundamental biological pathways.

This review focuses on the possible role in human health of the consumption of lignan-rich foods. Most of the plant lignans in human foods are converted by the intestinal microflora in the upper part of the large bowel to enterolactone and enterodiol, called mammalian or enterolignans.

1,1,1-Trichloro-2,2'bis(p-chlorophenyl) ethane (DDT) was the first widely used synthetic pesticide and is extremely persistent in both the environment and the human body. The introduction of DDT revolutionised agricultural production and has been credited with the elimination of malaria from the United States and Europe.

Fumonisins are mycotoxins produced by Fusarium moniliforme that are prevalent in corn, sorghum, millet and other agricultural products. It is possible that fumonisins are aetiological agents in human oesophageal cancers. The International Agency for Research on Cancer have designated toxins derived from F. moniliforme as group 2B (possibly carcinogenic
