Interfacial assembly and rheology of multi-responsive glycyrrhizic acid at liquid interfaces.
Soft MatterGlycyrrhizic acid (GA), a naturally derived food-grade saponin molecule, is a promising alternative to synthetic surfactants for stabilizing multiphase systems including emulsions and foams, due to its biological activity and surface-active properties ...

When surfactants adsorb at liquid interfaces, they not only decrease the surface tension, they confer rheological properties to the interfaces. There are two types of rheological parameters associated to interfacial layers: compression and shear.

Interfacial Rheology of Surfactant Solutions
1992Surface light scattering has been developed as a probe of the viscoelastic response of liquid surfaces. Results from experiments on dilute solutions of a homologous series of primary alcohols indicate that the effective value of the surface dilational viscosity is negative for these systems.

Effect of interfacial rheology on model emulsion coalescence I. Interfacial rheology.
Journal of colloid and interface science, 2007Interfacial elasticity and "dynamic" surface pressure isotherms were measured for interfaces between a dispersed water phase and a continuous phase of asphaltenes, toluene, and heptane. The interfacial modulus is a function of asphaltene concentration and in all cases reached a maximum at an asphaltene concentration of approximately 1 kg/m(3).

Tuneable Control of Interfacial Rheology and Emulsion Coalescence
ChemPhysChem, 2009AbstractBreaking point: Switchable peptide surfactants are used to demonstrate that the extent of crossâlinking in an interfacial surfactant layer can control the rate of emulsion coalescence. Pictured is the rupture of an aqueous thin film where the peptide layer lacks sufficient strength to prevent hole formation, but nonetheless dramatically slows ...

Influence of phase transition and photoisomerization on interfacial rheology
Physical Review E, 2003This paper presents the shear responses and interfacial rheology of photosensitive monolayers. Langmuir films of a fatty acid containing an azobenzene moiety that can undergo trans-cis photoisomerization have been investigated for their structural and dynamical properties.

The interfacial phenomena reflected by the thickness of oil films and the stability of oil-in-water emulsions were observed in the soft heterogeneous combination (SHC) flooding process, which were closely linked with the oil recovery.
