Interfacial shear rheology of perfluorosulfonic acid ionomer monolayers at the air/water interface

We report a systematic rheological analysis of perfluorosulfonic acid (PFSA) ionomer monolayers at the air/water interface. Equipped with a custom-designed double wall knife-edge interfacial rheometer, we measure both the linear and nonlinear viscoelasticity of various PFSA ionomer monolayers.

Abstract The interfacial viscoelastic behavior of adsorption layers at the oil/water interface for soy protein isolate (SPI), β-conglycinin (7S) and two hydrolysates of soy protein were investigated using a rotational rheometer equipped with Du Nouy ring geometry. Two kinds of soy protein hydrolysates were prepared by selective and limited hydrolysis.
