Food Sci NutrThe levels of vitamin C and E, and β‐carotene in hydroponic and soil‐based tomatoes, spinach, and strawberries were analyzed. Vitamin C and E were significantly higher in hydroponically grown tomatoes and strawberries. β‐carotene was significantly higher only in the hydroponic spinach.
