Dana je opća definicija alkaloida, opisana biološka rasprostranjenost i lokalizacija u biljnim tkivima te njihova funkcija u biljkama. Navedena je uobičajena podjela alkaloida na podgrupe.

Kofein je alkaloid kojeg sadrže mnoge biljke i sastojak je mnogih namirnica. Molekule kofeina nalazimo kod 60-ak biljnih vrsta, ali su najviše zastupljene u kavi, čaju i kakao-zrnu. Kofein je izoliran i imenovan početkom 19. stoljeća, međutim točan kemijski sastav kofeina utvrđen je tek 1875. godine. To je molekula bez mirisa, gorkastog okusa.
