Effect of Salt Concentrations on the Proximate Composition, Microbial Load, and Sensory Attributes of Dry‐Salted Labeobarbus Species

open access: yesFood Science &Nutrition, Volume 13, Issue 9, September 2025.
This study evaluated the effect of varying salt concentrations (10%, 20%, and 30%) on the quality of Labeobarbus spp. from Lake Tana. Higher salt levels reduced moisture content, water activity, and microbial load while improving ash content and sensory attributes. A 20% salt concentration was found to be optimal for achieving desirable product quality.

Flavonoids in Rosa roxburghii Tratt Fermentation Broth Ameliorate Obesity via DNMT3a/SIRT1‐Mediated Epigenetic Modulation

open access: yesFood Science &Nutrition, Volume 13, Issue 9, September 2025.
Rosa roxburghii Tratt fermentation broth alleviates obesity via DNMT3a/SIRT1 axis. RRTFB reduces fat mass, and inflammation while enhancing antioxidant activity. Flavonoids in RRTFB are the primary bioactive components. ABSTRACT Obesity‐related complications are often driven by chronic inflammation and oxidative stress, exacerbated by aberrant DNA ...

Totum‐448 Improves MASLD and Modulates Microbiota in Hamsters: Dose–Response Study and Effects of Supplementation Cessation

open access: yesFood Science &Nutrition, Volume 13, Issue 9, September 2025.
Totum‐448 is a blend of 5 plant extracts and choline designed to tackle early stages of MASLD. This work is the first study to evaluate the effect of Totum‐448 in a hamster model of the pathology. Totum‐448 demonstrated dose‐dependent improvements in key MASLD features in WD‐fed hamsters which gradually diminished after supplementation stopped.
