The effect of drying treatment on the flavor and quality of Longan fruit

Abstract The volatile compounds of the Longan fruit (Euphoria longana, Lamarck) were isolated using vacuum distillation and dichloromethane extraction. Samples were analyzed by GC and GC-MS to study the changes of the flavor of the fruit during the drying process.
