Developed functional ice cream with Bacillus coagulans and propolis extract (PE). PE increased viscosity, hardness total phenol content, antioxidant activity, and probiotic survival of ice cream. Sensory evaluation deemed all probiotic ice cream samples acceptable despite altered color profiles.
