Impact of different dietary regimens on the lipidomic profile of mare's milk.
Food Research International, 2022Despite mare's milk being highly nutritious and beneficial to human health, the effects of different dietary regimens on the lipid profile of mare's milk remain to be completely understood.

A UPLC-Q-TOF-MS-based metabolomics approach for the evaluation of fermented mare's milk to koumiss.
Food Chemistry, 2020The fermentation of mare's milk into koumiss produces many beneficial functional compounds depending on the metabolism of the initial microbial flora. In this study, metabolites found in mare's milk and resulting koumiss were identified.

Uses of mares’ milk in manufacture of fermented milks
International Dairy Journal, 2004Abstract Eight fermented milks (FM) were manufactured from mares’ milk by using: mares’ milk alone (FM1); a blend of mares’ milk and cows’ milk (FM2) or sheeps’ milk (FM3), at respective weight ratio of 70 to 30; mares’ milk fortified with sodium (Na)-caseinate (FM4) added at a level of 15 g kg −1 ; pectin (FM5) added at a level of 2.5 g kg −1 ; Na ...

Fat content and composition of mare’s milk
2006This review summarises knowledge on fat and fatty acid composition in mare milk. The fat content is very low in mare milk, generally comprised between 10 and 20 g/kg, but can sometimes be lower than 5 g/kg, with diets rich in concentrates. Milk fat strongly decreases during the first 2 - 3 months of lactation then remains stable or slightly decreases ...

The Composition of Mare's Milk
The Journal of Agricultural Science, 1931Samples of milk from one hundred and forty-two mares have been analysed for the purpose of determining the percentage of solids, protein, fat, lactose and ash. Of this number, thirty-eight samples were taken during the period of colostrum secretion and one hundred and four were colostrum-free milks.

Mare's milk production with Lipizzan mares
2015The aim of this trial was to determine mares' milk composition produced by mares of Lipizzaner breed. There is still a lack of knowledge regarding equine milk production and its composition. In most cases, published data based on milk samples taken from mares which were not included in the routinely milk production.

Enhancing the Riboflavin Content of Mare's Milk
New England Journal of Medicine, 1946ALTHOUGH cow's milk is generally considered one of the best natural sources of riboflavin, Holmes and his co-workers,1 in a study of the vitamin content of mare's milk, found that draft (Percheron) mares produced milk containing extremely little riboflavin. The riboflavin levels varied from 0.05 to 0.20 mg.
