GH172 Difructose Dianhydride I Synthase: A Two‐Stepped Journey via Glycosylation and Cyclization Using QM/MM Metadynamics

open access: yesChemistry – A European Journal, EarlyView.
Unlocking the chemistry of caramel by simulations and experimental validation. αFFase1${\alpha }\rm{FFase1}$ converts inulobiose into difructose dianhydride I, one component of caramel, through two steps: a rate‐limiting glycosylation (with a rare sugar ring flip) followed by a cyclization step, guided by residues E85, K147, and N226.

Structure–Activity Relationships in Methyl‐Driven Overhauser Effect DNP

open access: yesChemistry – A European Journal, EarlyView.
Dynamic nuclear polarization (DNP) was investigated in a wide array of methyl‐containing Blatter radicals to identify design principles for the synthesis of an Overhauser DNP polarizing agent. Fourteen different radicals were synthesized, which revealed that only radicals possessing sterically unhindered methyl groups in sites of high spin density were

Xylose Acetals ‐ a New Class of Sustainable Solvents and Their Application in Enzymatic Polycondensation

open access: yesChemSusChem, Volume 18, Issue 6, March 15, 2025.
Novel organic solvents with an unmodified carbohydrate core were synthesised both from D‐xylose and directly from biomass and were successfully used as reaction media for lipase biocatalysts to synthesise aliphatic and aromatic polyesters. Abstract The use of organic solvents in academic research and industry applications is facing increasing ...

Redox Biocatalysis in Lidocaine‐Based Hydrophobic Deep Eutectic Solvents: Non‐Conventional Media Outperform Aqueous Conditions

open access: yesChemSusChem, Volume 18, Issue 6, March 15, 2025.
Two hydrophobic DESs, lidocaine/oleic acid and lidocaine/decanoic acid, were utilized as reaction media that were enzyme‐compatible and highly substrate‐solubilizer for carbonyl reduction catalyzed by horse liver alcohol dehydrogenase, focusing on the effect of water contents and on maximizing substrate loadings, which showcases for the first time the ...
