Lipophilic compounds in garlic decrease the toxicity of methylmercury by forming sulfur adducts
Food and Chemical Toxicology, 2021Garlic (Allium sativum L.) contains numerous sulfur compounds. We have previously found that reactive sulfur species such as glutathione persulfide, glutathione polysulfide, protein-bound persulfides, and hydrogen sulfide can bind to methylmercury to give bismethylmercury sulfide, which is less toxic than methylmercury.

Binding of Methylmercury Compounds by Humic and Fulvic Acids
Water, Air, & Soil Pollution, 1995Humic and fulvic acids were isolated from Fawn Lake in Ontario and investigated by membrane dialysis for their ability to bind CH3Hg+. By measuring the distribution of methylmercury compounds in and outside of the dialysis membrane, for the first time, binding capacities and conditional stability constants for CH3Hg+ and humic acids could be calculated.

Organometallics, 2004The compound [Ph2N3C2(C3F7)2]HgCH3 was synthesized from Na[Ph2N3C2(C3F7)2] and CH3HgCl. In solution, it exists as a mixture of two isomers that interconvert slowly on the NMR time scale. Both isomers feature a η1-Ph2N3C2(C3F7)2 ligand.
