Comprehensive Evaluation of Mathematical Models Used in the Thin‐Layer Cold Dried Foods

Food Science &Nutrition, Volume 13, Issue 7, July 2025.
This study comprehensively evaluates the statistical criteria applied in mathematical models in thin layer drying of foods. As a functional sensitive food, fish was used in different sample thicknesses with high air velocity and cold drying. It was concluded that only r, R2, χ2 and RMSE equations were sufficient in the evaluation of mathematical models.
