Effects of Ultrasound Pretreatment and Dehydration Temperature on the Quality of Dehydrated Soy Cheese (Beske)

open access: yesAgriFood: Journal of Agricultural Products for Food, EarlyView.
Ultrasound pretreatment in combination with controlled dehydration at temperatures between 50°C and 60°C is appropriate for producing healthy, acceptable, and shelf‐stable beske (soybean cheese). ABSTRACT Soy cheese, locally known as beske is a protein‐rich product from soymilk but is highly perishable with limited shelf life.

Who Is Structurally Able to Participate in the Sustainable Protein Transition and Through What Mechanisms?

open access: yesAgriFood: Journal of Agricultural Products for Food, EarlyView.
Participation in transitions toward more sustainable protein consumption is driven primarily by sustainability motivation, whereas behavioural capability determines whether intentions translate into action. Despite high awareness among Chinese consumers, gaps persist, indicating that policies must jointly address motivational and practical barriers to ...

Effect of Broad‐Spectrum Antibiotic Prophylaxis on Post‐Pancreatoduodenectomy Infectious Complications: Nationwide Inpatient Database Study in Japan

open access: yesAnnals of Gastroenterological Surgery, EarlyView.
Using a nationwide Japanese inpatient database, we evaluated whether broad‐spectrum antibiotic prophylaxis improves postoperative outcomes after pancreatoduodenectomy compared with narrow‐spectrum antibiotics. In propensity score–weighted analyses of 45 099 patients, broad‐spectrum prophylaxis was associated with significantly lower rates of intra ...

Asking the 5 W's for designing next‐generation bioprocessing

open access: yesAIChE Journal, EarlyView.
Abstract Biotechnology is expanding beyond traditional, centralized fermentation and toward next‐generation bioprocessing paradigms that emphasize flexible deployment outside the laboratory with application‐specific performance. However, many bioprocesses fail to translate beyond proof‐of‐concept into industrially viable systems because early design ...

Automated Bacterial Identification and Morphological Feature Analysis in Low‐Dose Cryo‐EM Using YOLOv11

open access: yesAdvanced Intelligent Discovery, EarlyView.
AI‐based tools enable rapid characterization of bacterial ultrastructure in low‐dose cryogenic transmission electron microscopy. The envelope thickness tool quantifies membrane thickness and anisotropy. The flagella module analyzes filament morphology and detects cell‐flagella contacts.

An Attention‐Assisted Machine Learning System for Deep Microorganism Image Classification

open access: yesAdvanced Intelligent Systems, EarlyView.
An attention‐assisted DenseNet201 framework was developed for the classification of eight microorganism classes from microscopic images. The proposed model improved classification performance and achieved an accuracy of 87.38%. Advances in microbiology and environmental health fundamentally depend on precise and timely microorganism identification ...

Pathogenic PF4/Polyanion ELISA‐Negative Antibodies in HIT

open access: yesAmerican Journal of Hematology, EarlyView.
ABSTRACT Background Platelet factor 4‐polyanion enzyme‐linked immunosorbent assays (ELISAs) are considered highly sensitive for diagnosing heparin‐induced thrombocytopenia (HIT), such that current practice guidelines recommend use of ELISA‐negative results to exclude HIT.
