β‐Lactoglobulin Stabilized Emulsions: A Small Angle X‐Ray Scattering Study on Stability, Ageing, and Thermal Effects

This study investigates the structural differences in β‐lactoglobulin stabilized emulsions (BLGem) under various conditions (fresh, aged, and aged at high temperature) using small angle x‐ray scattering (SAXS). The graph shows change in intensity over a range of scattering vectors, with visual evidence of emulsions at different conditions.

Variability in the Content of Essential Oils and Selected Mycotoxins in Spices of the Apiaceae Family

open access: yesFlavour and Fragrance Journal, EarlyView.
The study analysed essential oils and mycotoxins in five types of spices. The results showed variability in oil yield and detection of T‐2 and HT‐2 toxin concentrations, highlighting the importance of quality assessment of spices to ensure food safety.
