Texture Matters: Linking Sensory Properties of Fruit Gum Candies to Consumer Acceptance

Sensory characterization and consumer acceptance testing (n = 147) of gelatine‐ and plant‐based fruit gum candies revealed that texture, alongside taste, is a key driver of overall liking.
