Relationship Between Physical Characteristics of Cereal Polysaccharides and Soft Tribology-The Importance of Grain Source and Malting Modification. [PDF]
The physical characteristics of the main starch and non‐starch polysaccharides in worts were characterized. The lubrication behaviour of the worts was analyzed by soft tribology. The data analysis showed the relationship between the molar mass and conformation of these polysaccharied and lubrication behaviour in laboratory‐produced worts.
