Neuroprotective Effects of Carnosine Against Corticosterone‐Induced Depression and Memory Impairment

open access: yesFood Science &Nutrition, Volume 14, Issue 5, May 2026.
This main findings of the study and illustrates the key workflow. ABSTRACT Corticosterone (Crt) is reported to induce oxidative stress in experimental animals. Carnosine (Crn), a well‐known dipeptide antioxidant synthesized endogenously from β‐alanine and L‐histidine, neutralizes oxidative stress. The current study examines the influences of Crn on Crt‐

Functional, Nutritional and Biological Properties of Ice Cream Produced by Yeast Inoculation

open access: yesFood Science &Nutrition, Volume 14, Issue 5, May 2026.
This study investigates the inoculation of ice cream mix with three different species of yeast. The results demonstrate that yeast inoculation significantly enhances the functional value, provides acquired probiotic properties, and improves the overall nutritional profile of the final ice cream product.

A Novel Type of Fluorescent Chlorophyll Catabolites Hypermodified by Lipophilic Chloroplast Membrane Components

open access: yesHelvetica Chimica Acta, Volume 109, Issue 5, May 2026.
Breakdown of chlorophyll (Chl) is a fundamental biological phenomenon. In de‐greening banana leaves, Chl is transformed into colorless “fluorescent” Chl‐catabolites (FCCs) that cause the leaves to luminesce blue. Hypothesis‐driven search for apolar banana‐FCCs, and structure elucidation, have revealed a striking first link between lipid metabolism and ...

Sample Preparation and Separation of Lignans by Liquid Chromatography

open access: yesJournal of Separation Science, Volume 49, Issue 5, May 2026.
ABSTRACT Lignans are important phytochemicals found mostly in the resins of coniferous trees, but are also introduced into human diets through foods such as sesame seeds and extra‐virgin olive oil. They are pharmacologically interesting mainly because of their antioxidant activities, and they have also been shown to have cytotoxic and antimicrobial ...
