Polysaccharide Composition of Dietary Fiber During Raspberry and Blackberry Juice Production
Fiber is one of the most important ingredients of fruit that has an influence on the gastrointestinal tract and biochemical parameters of blood. Fiber has texturizing functions in food processing. The fiber’s properties (water-binding capacity, swelling,

Coagulative granular hydrogels are composed of packed thrombin‐functionalized microgels that catalyze the conversion of fibrinogen into a secondary fibrin network, filling the interstitial voids. This bio‐inspired approach stabilizes the biomaterial to match the robustness of bulk hydrogels without compromising injectability, mimicking the initial ...

Aqueous Two‐Phase Bioinks for Discrete Packing and Compartmentalization of 3D Bioprinted Cells
Aqueous two‐phase systems (ATPS) enable the formation of biomimetic interfaces crucial for tissue engineering. However, clinical translation remains limited by the challenge of precisely controlling cellular compartmentalization. Here, we developed ATPS biomaterial inks for 3D bioprinting allowing tuneable droplet formation via NaCl modulation.

Influence of calcium-binding salts on heat stability and fouling of whey protein isolate dispersions [PDF]
peer-reviewedThe effect of the calcium-binding salts (CBS), trisodium citrate (TSC), tripotassium citrate (TPC) and disodium hydrogen phosphate (DSHP) at concentrations of 1–45 mm on the heat stability and fouling of whey protein isolate (WPI ...

A droplet microfluidic platform is employed to enable high‐throughput, uniform tumor spheroid generation for evaluating siRNA‐loaded nanomedicines at the protein level. As a proof of concept, breast (MCF‐7) and brain (U87 MG) cancer cell lines are investigated using this platform, revealing penetration profiles and therapeutic responses between the two

Relationship Between the Physical Properties and Oil Binding Capacity of Fats
Fats play a significant role in shaping the characteristics of foods, influencing texture, mouthfeel, appearance, and nutritional attributes. An important property of fats is their ability to entrap liquid oil known as oil binding capacity (OBC).

Engineered microparticle topographies direct human mesenchymal stem cell osteogenesis without biochemical additives. This osteogenic commitment is driven by canonical Hedgehog signaling and followed by temporal IGF‐II engagement. Two‐photon polymerization demonstrates spatial control, enabling the engineering of topographical gradients that pattern ...

Interactions between cadmium and lead with acidic soils: Experimental evidence of similar adsorption patterns for a wide range of metal concentrations and the implications of metal migration [PDF]
The importance of high- and low-affinity surface sites for cadmium and lead adsorption in typical European and Asian soils was investigated. Adsorption experiments on surface and deep horizons of acidic brown (Vosges, France) and red loess soils (Hunan ...
