Physicochemical, Rheological, and Sensory Properties of Low‐Fat Mayonnaises Formulated With Flaxseed Oil‐Based Sunflower and Whale Wax Oleogels

open access: yesJournal of the American Oil Chemists' Society, Volume 102, Issue 10, Page 1563-1575, October 2025.
In this study, low‐fat, carbohydrate‐free mayonnaise samples based on flaxseed oil–wax oleogels were successfully developed and analyzed. ABSTRACT This study aimed to prepare and characterize low‐fat mayonnaises containing 50% of total weight as fat by incorporating oleogels based on sunflower wax–flaxseed oil (SWO‐M) and whale wax–flaxseed oil (WWO‐M).

Development of Sorbitan Monostearate organogels for controlled delivery systems. [PDF]

open access: yes, 2011
The study describes the development of sorbitan monostearate (Span 60) based organogels with mustard oil as the solvent. Different compositions of organogels were prepared by varying the concentrations of span 60.

Rational design of self‐assembling ultrashort peptides for the shape‐ and size‐tunable synthesis of metal nanostructures

open access: yesJournal of Peptide Science, Volume 31, Issue 1, January 2025.
The use of peptide hydrogelators and their analogues as stabilisers and growth controllers to synthesise anisotropic gold nanoparticles (AuNPs) of different sizes and shapes is reported. The PentaOH‐AuNPs' hydrogel exhibits high antimicrobial potency against S. aureus and P. aeruginosa ATCC 27853 with negligible cytotoxicity, while TOH_1N‐AuNPs show no

Development of Curcumin Encapsulated Liposomes in Chlorhexidine‐Loaded Organogel Using Ternary Phase Systems for Treatment of Omphalitis in Infants

open access: yesAdvances in Pharmacological and Pharmaceutical Sciences, Volume 2025, Issue 1, 2025.
Infections in infants, after childbirth, remain a leading cause of neonatal morbidity and mortality, globally. A soaring percentage of these infections arise from bacterial colonization of the umbilicus. Current therapy for omphalitis includes the topical application of chlorhexidine on the umbilicus.

Oleogel From Basil Seed Oil for Quercetin Delivery: Physicochemical, Rheological, Thermal, and In Vitro Digestion Properties

open access: yesJournal of Food Processing and Preservation, Volume 2025, Issue 1, 2025.
This study is aimed at developing and characterizing functional oleogels (OGs) based on Ocimum basilicum L. seed oil (a rich source of α‐linolenic acid) structured with beeswax (5%–20%) for the effective delivery of quercetin. The formulation’s physicochemical properties, structural integrity, and release behavior under simulated gastrointestinal ...
