Tuning Functional Properties of Starch–Pectin Composites by Extrusion
This study demonstrates that extrusion temperature modulates the structural cohesion, water affinity, and rheological properties of composites based on pregelatinized starch and pectin. The findings highlight the potential of thermal processing to tailor the functionality of starch–pectin systems for food and biopolymer applications.
